Carrot Salad

 

Carrot Salad

This low sodium salad is easy to prepare, especially if you use a salad shooter or a food processor to grate the carrots. It's colorful, tasty and good for you.

2 servings: 84 mg. sodium per serving)

2 small (3 oz. each) carrots, grated
1/4 cup raisins
3 Tablespoons chopped no salt added walnuts
4 teaspoons orange juice concentrate
4 teaspoons water
1/2 teaspoon lemon pepper with garlic and onion *

Prep. Instructions

1. Combine orange juice concentrate, water and lemon pepper in a bowl. Stir to combine well.
2. Have all other ingredients on hand.

Cooking Instructions

1. Place carrots, raisins and walnuts in a large bowl.

2. Pour orange juice mixture over the carrot mixture. Stir to combine. Serve.
