Arugula Salad

 

Arugula Salad

Arugula is a very low sodium salad green with a peppery, mustard like flavor. It is featured here with apple and turnip, a tasty combination.

2 servings: 31 mg. sodium per serving

2 firmly packed cups arugula, washed and dried
1/3 cup apple slices (1 inch long slices; 1/4 inch thick)
1/4 cup thinly sliced white turnip (1 inch long slices, 1/4 inch thick)

Dressing

1 Tablespoon extra virgin olive oil
1 Tablespoon fresh lime juice
1/4 teaspoon dried oregano
1/4 teaspoon sugar
1/4 teaspoon lemon pepper with garlic and onion *

Prep. Instructions

1. Combine dressing ingredients in a small bowl. Add turnip slices. Mix to combine. Place bowl in refrigerator; let marinate for 1 hour.
2. Have all other ingredients on hand.

Cooking Instructions

1. Place arugula in a bowl with apple slices. Gently mix to combine.

2. Add dressing and turnip slices. Mix to combine. Serve.
