Arugula Green Leaf lettuce Salad

In this version of low sodium arugula salad, the peppery arugula compliments the mild green leaf lettuce, while the crunchy nuts and tangy vinegar dressing make it a delicious treat.

2 Servings: 81 mg. sodium per serving

1 cup firmly packed arugula leaves
1 cup firmly packed torn green leaf lettuce
2 Tablespoons sliced no salt added almonds
1 Tablespoon extra virgin olive oil
2 teaspoons no salt added rice vinegar
1/4 teaspoon black pepper
4 teaspoons grated Parmesan cheese

Cooking Instructions

1. Wash and dry the arugula and lettuce leaves. Place in a salad bowl. Sprinkle with almonds.
