Ground Turkey Stir-Fry

This tasty recipe is easier to make if you have cooked and frozen in portions the low sodium roasted tomato and pizza sauce found on this website. If you use store bought items, look for the lowest sodium alternatives, and adjust the amounts of sodium per serving in this recipe accordingly.

2 servings: 215 mg. sodium per serving

1/2-pound ground lean turkey
1/2cup chopped (1/4-inch) onion
1/2 cup chopped (1/4-inch) green beans
1/2 cup chopped (1/4-inch) green bell pepper
2-ounces chopped roasted tomato (1/4-inch pieces)
1/4 cup low sodium pizza sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon black pepper
1/8 teaspoon salt
1/2 cup cooked quinoa, cooked without salt

Prep. Instructions

1. Place onion, green beans and green bell pepper into a bowl.

2. Combine oregano, basil, black pepper and salt in a separate bowl.

3. Have all other ingredients on hand.

Cooking Instructions

1. Crumble turkey meat into a 9-inch skillet. Add the onion, beans and bell pepper to the pan. Heat the skillet over medium heat until the turkey starts to sizzle. Turn heat down to medium low and cook, stirring often, until the turkey loses its pink color, about 5 to 7 minutes.

2. Add tomatoes. Stir to combine.

3. Add spices. Stir to combine.

4. Add pizza sauce. Stir to combine.

5. Add quinoa. Stir to combine. Heat through for several minutes, stirring often. Serve.
