Asparagus Stir Fry with Chicken

This easy stir-fry recipe uses asparagus, a healthy vegetable that is a great source of fiber and contains numerous vitamins, including vitamins A, C, E and K. I have also read that asparagus is a good source of potassium, which helps lower blood pressure. It adds a tasty crunch to this recipe.

2 servings: 353 mg. sodium per serving

1 Tablespoon healthy oil
6 ounces cooked chicken breast, cut into 1/2-inch pieces
1/4 cup low sodium chicken broth
1/4 teaspoon black pepper
1/4 teaspoon lemon pepper with garlic and onion *
1/8 teaspoon salt
1 teaspoon reduced sodium Tamari sauce
1 Tablespoon all-purpose flour
3/4 teaspoons turmeric
1/2-pound fresh asparagus

Prep. Instructions

1. Combine chicken broth, peppers, salt and tamari sauce in a bowl.

2. Combine flour and turmeric in a separate bowl.

3. Remove rough ends from asparagus. Slice diagonally into 1/4-inch pieces.

4. Have all other ingredients on hand.

Cooking Instructions

1. Heat oil in a 10-inch skillet over medium low heat. Add asparagus pieces. Cook, stirring often, until asparagus is almost tender, about 5 to 7 minutes.

2. Add flour mixture. Stir to combine.

3. Add chicken broth mixture. Cook, stirring constantly, until sauce thickens, about 2 to 3 minutes.

4. Add chicken. Stir to combine. Bring mixture to a soft boil. Turn heat down to low. Simmer until heated through, about 3 to 5 minutes, stirring often. Serve.
